History of National Spinach Day

Originally from Persia (now Iran), spinach made its way to China in the 7th century, where it was known as the “Herb of Persia” or “Persian Green.” The vegetable eventually made its way to Europe, landing in Spain a few hundred years later. She was born in Florence, Italy, and moved to France after marrying King Henry II. Catherine is said to have loved spinach and insisted on having it served at every meal.
